This lot comes to us through importer Caravela Coffee, who began developing relationships with producers in this region in 2012. El Aguacatal is a sub-region of the municipality of La Palma, Chalatenango in El Salvador. It’s also part of the Montecristo Trifinio, a tri-border national park, shared between El Salvador, Guatemala, and Honduras. Categorized as a biosphere reserve in 2011, the Trifinio area benefits from incredibly rich biodiversity. Coffee from this region is grown in an unusual white stone soil giving it a unique profile. Production by the 21 small-scale farmers responsible for this coffee included milling at their own micro-mills, a unique aspect of production in this region. Once milled, their lots were individually cupped and selected from hundreds of others to be part of this offering, which features a harmonizing cup profile. We’re excited to offer this unique coffee that also includes  a 14-hour dry fermentation process, and we hope you enjoy!
