This is our second year partnering with exporter Osito Coffee to bring you a coffee from Indian coffee producers Ashok and Divya Patre of Ratnagiri Estate. For nearly a century, the Patre family has cared for their land, producing specialty coffee and fine pepper. The Patre family has one of the most impressive coffee producing operations that Osito has ever seen, with precise attention to detail and a strong focus on coffee innovation. This lot is a Washed Carbonic Maceration process, which is a form of anaerobic fermentation. After pulping, the coffee is placed in a stainless steel fermentation tank that has been purged of oxygen using carbon dioxide. The coffee ferments for 90 hours before soaking in clean water for 24 hours. It is then dried on raised beds for 27 days.
We selected this coffee to highlight Ashok and Divya Patre’s amazing work at Ratnagiri Estate. We’re also excited to offer an experimentally processed Washed Carbonic Maceration coffee for the first time. This coffee has complex citrus and winey tasting notes with a strong strawberry wafer finish.

Shipping Information
We operate Monday-Friday and strive to ship your order within 2 business days of the order or renewal date (not including weekends.) Your order will be shipped by UPS or USPS to your door. You will receive a tracking notification when your order ships.
Roasting Information
All coffee is roasted fresh to order on our Loring S35 Kestrel Coffee Roaster. All bags are stamped with the roast date, and we think coffee tastes best if consumed within 2-4 weeks. However, if left whole bean and stored in a cool, dry place away from sunlight, the coffee can remain enjoyable for up to 4-6 months, depending on the bag or container. Most of our coffee is roasted to a medium or light/medium roast level, except for All Day, which is our staple dark roast offering.
