We have been purchasing a natural processed Brazilian coffee from Yuki Minami since 2021, which quickly became a favorite of our guests and staff alike. We just brought Yuki’s coffee back to our lineup, but we’re not stopping there! After years of playing around with experimental processing, Yuki received a coffee post-harvest consultation from Giselle Abreu, who holds a Ph.D. in post-harvest processing. Dr. Abreu’s consultation informed this special, second release from Yuki’s farm, which features something seldom seen in our lineup: a co-fermentation. Co-fermentation entails fermenting coffee in tanks with fruit, fruit juice, or a sweetener, such as molasses. In this case, the coffee went through a two-stage fermentation. First, the coffee and coffee cherries was fermented for two days before being fermented with a slurry of locally-grown Brazilian pineapple.

We selected this coffee to showcase the diversity of Yuki Minami’s work. This coffee is sweet and complex with a soft lactic acidity. We are so happy to be able to share it with you!
