We met Pablo and Eva del Cid in 2024, while they were taking a cross-country trip to meet specialty coffee roasters in the United States. When they toured our facility, we brewed some of their coffee together and got to know each other; needless to say, we were very impressed with their story and the quality of their coffee. Like many young coffee producers from multi- generational coffee producing families, Pablo is focusing on quality over quantity. Instead of what has historically been the status quo for his family's farm, he is pushing the boundary with experimental coffee processes. The del Cid family is also focusing on ways they can give back to the community. They have donated land to build a school in Santa Elena Barillas. This school is named after Pablo’s great grandfather, Eusebio and has over 300 full-time students. 

We selected this coffee to begin a relationship with the del Cid family and to highlight the amazing coffee they are producing. This coffee has an interesting flavor profile that reminds us of fresh plums, yogurt-covered pretzels, citrus fruit, and strawberry candy.

Shipping Information

We operate Monday-Friday and strive to ship your order within 2 business days of the order or renewal date (not including weekends.) Your order will be shipped by UPS or USPS to your door. You will receive a tracking notification when your order ships.

Roasting Information

All coffee is roasted fresh to order on our Loring S35 Kestrel Coffee Roaster. All bags are stamped with the roast date, and we think coffee tastes best if consumed within 2-4 weeks. However, if left whole bean and stored in a cool, dry place away from sunlight, the coffee can remain enjoyable for up to 4-6 months, depending on the bag or container. Most of our coffee is roasted to a medium or light/medium roast level, except for All Day, which is our staple dark roast offering.
