This is our first year purchasing coffee from Fabio Caballero Jr., via our friends at Cima Cafe

This coffee comes from Finca La Salvaje and 5th generation coffee farmer Fabio Caballero Jr.! Fabio Jr. won the 2025 Honduran Cup of Excellence with a washed Gesha from the same farm as this offering. Fabio Jr. inherited this farm from his grandfather and world-renowned coffee producer, Don Fabio Caballero (whom he still works alongside). Don Fabio is known for his commitment to quality innovations, multiple Cup of Excellence wins, and being a pioneer in the world of direct trade relationships in coffee. 

To add to what makes this release so special, the 2022/2023 harvest in Honduras was the last year that Don Fabio managed La Salvaje before passing it down; Commonplace Coffee purchased a washed Java from this very harvest/farm that was used as a special release during our 20th anniversary! In clearer terms: same farm, same seeds, same degree of coffee excellence, different man in charge.

This washed Java coffee was handpicked at peak ripeness , once sugar content levels reached 21° Brix (a unit of measurement used to measure the amount of sugar in a solution; each degree of Brix is equal to 1 gram of sugar in 100 grams of a solution). In this case, juice from cherries are squeezed into a refractometer which uses light refraction to measure solids in certain liquids. Upon being harvested, the cherries underwent a short 12 hour fermentation to encourage the development of refined flavors while maintaining this varieties inherent floral and citrus qualities. After fermentation, the cherries were pulped and washed of their residual fruit mucilage and transferred to raised beds under partial shade where they were then dried between 12-15 days. After drying, the coffee was stabilized ‘in parchment’ (parchment is a thin protective layer just outside of the coffee seeds which is what we call “coffee beans”) before they were milled and shipped to us!

First and foremost, we chose this coffee to kick-start a buying relationship with Fabio Caballero Jr.. We also hope to highlight the exceptional quality that comes from Finca La Salvaje in Honduras. Commonplace has made special connections, relationships and friendships in Honduras, and we couldn’t think of a better way to celebrate that than by offering this beautiful coffee. This coffee is very delicate with a panela and honey-like sweetness, bright acidity and notes of white tea and citrus peel.

Shipping Information

We operate Monday-Friday and strive to ship your order within 2-3 business days of the order or renewal date (not including weekends.) Your order will be shipped by UPS or USPS to your door. You will receive a tracking notification when your order ships.

Roasting Information

All coffee is roasted fresh to order on our Loring S35 Kestrel Coffee Roaster. All bags are stamped with the roast date, and we think coffee tastes best if consumed within 2-4 weeks. However, if left whole bean and stored in a cool, dry place away from sunlight, the coffee can remain enjoyable for up to 4-6 months, depending on the bag or container. Most of our coffee is roasted to a medium or light/medium roast level, except for All Day, which is our staple dark roast offering.
